- 1–½ cups fresh apple cider
- 4 tablespoons cold unsalted butter, diced
- 2 large eggs
- 1/3 cup granulated sugar
- ½ cup brown sugar
- 1/3 cup light olive oil
- ¼ cup sour cream
- 1–½ teaspoons baking powder
- ½ teaspoon baking soda
- 1–½ teaspoons ground cinnamon
- Pinch allspice
- ¼ teaspoon coarse kosher salt
- 1–¾ cups all-purpose flour
Instructions
- Preheat your oven to 350°F and prepare a 9” square baking dish.
- In a sauté pan, boil apple cider until reduced by half (about 5 minutes). Add diced butter and whisk until melted.
- In a medium bowl, mix eggs, sugars, oil, sour cream, baking powder, baking soda, cinnamon, and salt. Slowly whisk in the reduced cider mixture.
- Gently fold in flour until just combined.
- Pour batter into the prepared dish and bake for 22-25 minutes until golden and puffed.
