- ¼ cup sour cream (or Greek yogurt) (room temperature)
- 2 large eggs (room temperature)
- 1 teaspoon pure vanilla extract
- ½ cup (120 ml) milk (room temperature)
- 1 ½ cups diced apples (Granny Smith or Honeycrisp)
Instructions
- Preheat your oven to 400°F (200°C) and line a muffin tin with paper liners.
- In a small bowl, combine flour, brown sugar, granulated sugar, and cinnamon for the crumble topping. Mix in melted butter until clumps form and set aside.
- In a separate bowl, whisk together flour, baking powder, salt, and additional cinnamon.
- In a large bowl, beat brown sugar, granulated sugar, and room temperature butter until fluffy. Add eggs, sour cream, and vanilla extract; mix well.
- Gradually add half of the dry ingredients followed by milk; mix until just combined. Gently fold in diced apples.
- Fill muffin cups three-quarters full with batter and top generously with crumble mixture.
- Bake for about 20 minutes or until a toothpick inserted comes out clean. Cool before serving.
