  • Salt & freshly cracked black pepper to taste
  • ¼ cup crispy fried onions (store-bought or homemade)
  • 1 large head of broccoli, cut into florets
  • 2 cloves garlic, minced
  • ¼ cup grated Parmesan cheese
  • 2 tbsp butter
  • 8 oz cremini mushrooms, sliced
  • ½ ripe avocado
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese
  • 1 tbsp lemon juice

Instructions

  1. In a bowl, toss chicken slices with olive oil, minced garlic, oregano, thyme, lemon juice, salt, and pepper.
  2. Heat a grill pan or skillet over medium-high heat.
  3. Grill or sauté chicken for 2-3 minutes per side until cooked through and lightly charred. Set aside.
  4. Preheat oven to 200°C (400°F).
  5. In a bowl, toss broccoli florets with olive oil, minced garlic, salt, and pepper.
  6. Spread in a single layer on a baking sheet.
  7. Roast for 15 minutes.
  8. Sprinkle Parmesan cheese over the broccoli and roast for another 5-10 minutes until tender-crisp and golden.
