Instructions
- Preheat your oven to 400°F (200°C). Line a muffin pan with cupcake liners.
- In a bowl, beat melted butter and brown sugar until blended. Mix in egg, vanilla extract, mashed banana, and sour cream.
- In another bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and graham cracker crumbs.
- Gradually combine dry ingredients with the wet mixture while alternating with whole milk. Mix until just combined.
- Fold in 3/4 cup of chocolate chips and vegan marshmallows.
- Fill muffin liners two-thirds full and sprinkle remaining chocolate chips and marshmallows on top.
- Bake for about 16 minutes or until a toothpick comes out clean.
- Let cool in the pan for a few minutes before transferring to a wire rack.
