  • 1 cup miniature chocolate chips, divided
  • 1 cup miniature vegan marshmallows bits, divided

Instructions

  1. Preheat your oven to 400°F (200°C). Line a muffin pan with cupcake liners.
  2. In a bowl, beat melted butter and brown sugar until blended. Mix in egg, vanilla extract, mashed banana, and sour cream.
  3. In another bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and graham cracker crumbs.
  4. Gradually combine dry ingredients with the wet mixture while alternating with whole milk. Mix until just combined.
  5. Fold in 3/4 cup of chocolate chips and vegan marshmallows.
  6. Fill muffin liners two-thirds full and sprinkle remaining chocolate chips and marshmallows on top.
