Ingredients

Scale
  • 6 oz (170 g) cream cheese, cold
  • 3 tbsp (38 g) granulated white sugar
  • 1/2 tsp vanilla
  • 1/4 cup (50 g) granulated white sugar
  • 2 tsp (3 g) black cocoa powder
  • 1 1/2 cups (188 g) all-purpose flour, spooned and leveled
  • 1/2 cup (40 g) black cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup (168 g) unsalted butter, softened
  • 3/4 cup (165 g) light brown sugar, packed
  • 1/4 cup (50 g) granulated white sugar
  • 2 egg yolks, at room temperature
  • 1 1/2 tsp vanilla

Instructions

  1. Prepare the cheesecake filling by blending cold cream cheese with granulated sugar and vanilla until smooth.
  2. In a separate bowl, mix flour, black cocoa powder, baking powder, and salt. In another bowl, cream together softened butter, light brown sugar, and granulated sugar until fluffy.
  3. Add egg yolks and vanilla to the butter mixture and mix well. Gradually combine dry ingredients with the wet mixture until just blended.
  4. Preheat your oven to 350°F (175°C). Scoop dough, flatten it in your palm, place a teaspoon of cheesecake filling in the center, and seal it by rolling it back into a ball.
  5. Roll each cookie in black cocoa sugar before placing them on a lined baking sheet.
  6. Bake for 10-12 minutes or until edges are firm while centers remain soft.
