Ingredients
Scale
- 1 1/2 cups unsalted butter (melted)
- 2 1/4 cups granulated sugar
- 1 1/2 cups light brown sugar (packed)
- 6 large eggs (room temperature)
- 3 tbsp vegetable oil
- 2 tbsp pure vanilla extract
- 2 1/4 cups all-purpose flour
- 1 1/2 cups cocoa powder
- 1 1/2 tsps salt
- 1.5 qts favorite ice cream flavor
Instructions
- Preheat the oven to 350°F and grease two 8×8-inch pans with butter or baking spray. Line with parchment paper.
- In a medium bowl, combine melted butter, granulated sugar, and brown sugar using a hand mixer until well blended.
- Add eggs one at a time, mixing after each addition. Then mix in vegetable oil and vanilla extract.
- In another bowl, sift together flour, cocoa powder, and salt. Gradually add to the wet mixture until fully combined.
- Divide the batter between the prepared pans and spread evenly. Bake for 30–40 minutes until a toothpick inserted comes out mostly clean.
- Allow brownies to cool in the pan for about 10 minutes before transferring them to a cooling rack.
- Once cool, spread softened ice cream over one half of the brownies and top with the other half. Wrap tightly and freeze for at least six hours or overnight.
- Before serving, let sandwiches thaw for about five–ten minutes, slice into squares, and enjoy!
