Ingredients
- 3 lbs red potatoes
- 3–4 celery stalks
- 6 hard boiled eggs
- 2 green onions
- 1½ tsp paprika
- 1/4 tsp cayenne
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- 1/2 tsp thyme
- 1/2 tsp oregano
- 1 1/3 c mayonnaise
- 1/3 c sour cream
- 1 T apple cider vinegar
- 2 T Dijon mustard
- 1/2 tsp sea salt
- ½ tsp cracked pepper
Instructions
- Boil the potatoes in a large pot of salted water for 12-15 minutes until fork-tender. Drain and cool slightly.
- In a mixing bowl, whisk together mayonnaise, sour cream, apple cider vinegar, Dijon mustard, and spices.
- In a large bowl, combine cooled potatoes with chopped eggs, celery, and green onions. Toss with two-thirds of the dressing until well coated.
- Chill for at least 30 minutes. Just before serving, mix in the remaining dressing and garnish with parsley.
