Instructions

  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press into the bottom of a springform pan and bake for 8 minutes.
  2. Lower the oven temperature to 325°F (163°C). Beat the softened cream cheese until smooth; gradually add sugar, then eggs one at a time. Mix in sour cream and vanilla until just combined.
  3. Pour the filling over the cooled crust and bake for about 55-65 minutes until edges are set but center jiggles slightly. Cool in the oven with door ajar for one hour.
  4. Chill in the refrigerator for at least 4 hours or overnight.
  5. For caramelized bananas, melt butter in a skillet over medium heat; add brown sugar and stir until melted. Add sliced bananas and cook until golden brown.
  6. For the glaze, melt butter with brown sugar in a saucepan over low heat; stir in dark vanilla extract and simmer for 2-3 minutes.
  7. Once chilled, top the cheesecake with caramelized bananas and drizzle with warm glaze.
