  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • ½ cup roasted chestnuts, roughly chopped
  • 1 tbsp fresh oregano, chopped (or 1 tsp dried)
  • ½ tsp dried thyme
  • Salt & freshly cracked black pepper, to taste
  • 2 medium Yukon Gold potatoes, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh sage leaves, roughly chopped (or 1 tsp dried rubbed sage)
  • ¼ cup grated Parmesan cheese
  • 2 tbsp butter
  • 8 oz cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • ¼ cup fresh basil leaves, optional
  • 1 ½ cups heavy cream
  • ¾ cup grated Parmesan cheese, for sauce
  • ¼ cup chestnut puree, or 23 tbsp additional roasted chestnuts, finely minced/pasted with a splash of cream

Instructions

  1. Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Toss potato cubes with olive oil, minced garlic, chopped sage, and Parmesan; roast for 25-30 minutes until crispy.
  3. Marinate chicken slices with olive oil, garlic, chestnuts, oregano, thyme, salt, and pepper for at least 15 minutes.
  4. Grill marinated chicken until cooked through.
  5. In a skillet, sauté mushrooms and garlic in butter; add heavy cream, Parmesan, and chestnut puree to create the Alfredo sauce.
  6. Combine grilled chicken with Alfredo sauce and serve with crispy potatoes.
