  • 1 box pistachio instant pudding mix (3.4 oz box, do not use sugar-free)
  • 1/3 cup milk
  • 2.5 oz unsalted butter (5 TBSP)
  • 8 oz powdered sugar (2 cups)
  • 1 tsp vanilla extract
  • 1/8 tsp salt
  • 1/4 tsp almond extract
  • 2 oz roasted salted pistachios (1/2 cup), coarsely chopped

Instructions

  1. Preheat your oven to 350°F (175°C). In one bowl, mix flour and baking powder; set aside.
  2. Melt dark chocolate with unsalted butter until smooth. In another bowl, whisk together eggs, sugar, vanilla extract, and salt until fluffy. Combine melted chocolate mixture into the egg mixture.
  3. Fold in the flour mix and chopped pistachios until just incorporated.
  4. On a lined baking sheet, drop tablespoon-sized balls of dough about 2 inches apart. Bake for 10 minutes or until edges are firm but centers are soft.
  5. Cool cookies on a rack while preparing the frosting by mixing pistachio pudding with milk, then adding softened butter, powdered sugar, vanilla extract, salt, and almond extract.
