Instructions
- To make the creamy citrus dressing, combine orange juice, lemon juice, almond milk, parsley, olive oil, rice vinegar, minced shallots, and salt in a mason jar. Blend until smooth using an immersion blender.
- Preheat the grill to medium-high heat. Brush both sides of the pineapple slices with olive oil and grill for 2 minutes on each side until caramelized.
- Grill the corn on direct heat for about 5 minutes per side until slightly charred.
