  • 3 tbsp (42 g) unsalted butter, cut in cubes
  • 2 1/2 cups (313 g) all-purpose flour, spooned and leveled
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/4 cup (250 g) granulated white sugar
  • 1 cup (224 g) unsalted butter, softened
  • 1 egg
  • 1 tbsp vanilla bean paste
  • 1/2 cup (100 g) granulated white sugar (for rolling the dough in)
  • 1/2 cup (100 g) granulated white sugar (for the brulee topping)

Instructions

  1. Prepare the pastry cream: Heat whole milk and half of the sugar in a saucepan until steaming. In a bowl, whisk egg yolks with remaining sugar, salt, vanilla bean paste, and cornstarch. Gradually mix in hot milk, then return to heat until thickened. Stir in butter and chill.
  2. Make the cookie dough: Cream together softened butter and sugar until fluffy. Mix in egg and vanilla bean paste. Combine flour, baking powder, and salt separately; then add to wet ingredients until just mixed.
  3. Assemble cookies: Scoop pastry cream into cookie dough balls, enclose fully, roll in granulated sugar.
  4. Bake at 350°F (175°C) for 9 minutes or until edges are golden while centers remain soft.
  5. Caramelize the sugar topping using a torch or broiler until golden brown.
