  • 1 cup light brown sugar
  • 1 cup soy sauce
  • ⅓ cup brewed barley tea
  • 2 tablespoons apple cider vinegar
  • ½ teaspoon ground ginger
  • 1 tablespoon honey
  • ½ teaspoon red pepper flakes
  • 4 cloves garlic, minced
  • 3 tablespoons cornstarch
  • 2 tablespoons water
  • ¼ cup chopped green onions, for garnish

Instructions

  1. Place the chicken thighs at the bottom of the slow cooker.
  2. In a mixing bowl, whisk together brown sugar, soy sauce, brewed barley tea, apple cider vinegar, ground ginger, honey, red pepper flakes, and minced garlic.
  3. Pour the sauce over the chicken in the slow cooker.
  4. Cover and cook on high for 4 hours or low for 6 hours until chicken is tender.
  5. Remove the chicken, shred it to your desired texture.
  6. To thicken the sauce, mix cornstarch with water in a small bowl and stir into the slow cooker. Return shredded chicken and mix well.
  7. Cook for an additional 5–10 minutes until thickened. Serve garnished with chopped green onions.
