Instructions:🍴

Dry roast the semolina in a pan over low heat until it turns aromatic and lightly golden brown. Keep stirring continuously to prevent it from burning. Once done, transfer it to a plate and set aside.

In the same pan, heat ghee or oil over medium heat. Add mustard seeds and let them splutter.

Add urad dal and chana dal. Sauté until they turn golden brown.

Next, add chopped onions, green chilies, and ginger. Sauté until onions turn translucent.

Add curry leaves and a pinch of asafoetida. Stir well.

Now, add chopped carrots, capsicum, and green peas. Cook for a few minutes until the vegetables are slightly tender.

Pour 2 cups of water into the pan and bring it to a boil.

Once the water starts boiling, reduce the heat to low. Gradually add the roasted semolina while continuously stirring to avoid lumps formation.

Mix well and cook for 3-4 minutes until the upma thickens and reaches the desired consistency. Add salt to taste and mix again.

Turn off the heat and cover the pan. Allow the upma to sit for a couple of minutes to absorb the flavors.

Garnish with freshly chopped coriander leaves.

Serve hot upma with a side of coconut chutney or enjoy it as is. For an extra tangy flavor, squeeze some lemon juice on top before serving.
