Ingredients

Scale
  • 2 1/23 cups white whole wheat or all-purpose flour
  • 1 packet (2 1/4 teaspoons) instant yeast
  • 1/4 teaspoon kosher salt
  • 1 cup warm water or warm milk
  • 2 teaspoons honey
  • 7 tablespoons salted butter
  • 1/4 cup granulated sugar
  • 3 teaspoons cinnamon
  • 1/2 cup brown sugar
  • 1 cup powdered sugar
  • 2 tablespoons cream cheese
  • 1 teaspoon pure vanilla extract

Instructions

  1. In a stand mixer bowl, combine flour, instant yeast, and salt. Add warm water (or milk), honey, and 1 tablespoon butter. Knead until smooth.
  2. Cover the dough and let it rise in a warm place for 30 minutes to an hour.
  3. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  4. Mix granulated sugar and cinnamon in a small bowl for the cinnamon sugar mixture.
  5. Roll out the dough into a rectangle, spread with melted butter, and sprinkle with cinnamon-sugar mix. Cut into strips, twist into knots, and place on the baking sheet.
  6. Combine remaining melted butter with brown sugar and cinnamon; spoon over knots.
  7. Bake for about 16-20 minutes until golden brown.
  8. For the glaze, beat together powdered sugar, cream cheese, vanilla, and enough water to reach desired consistency; drizzle over warm knots before serving.
