- 1/2 cup Greek yogurt
- 1/2 cup buttermilk
- 1/2 cup unsalted butter (melted)

- 1 tsp vanilla extract
- 1 1/2 tsp almond extract
- 3/4 cup white granulated sugar
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1 1/2 cups cherries (fresh, pitted, and quartered)
- 1 tbsp corn starch
- 1/2 cup sliced almonds
- 1/2 cup confectioner’s sugar
- 1 to 2 tbsp cream
Instructions
- Preheat your oven to 350°F (177°C) and prepare an 8 ½-inch loaf pan with parchment paper.
- In a mixing bowl, combine eggs, Greek yogurt, buttermilk, melted butter, almond extract, vanilla extract, and sugar. Beat until smooth.
- In another bowl, mix flour, baking powder, and salt; then sift into the wet ingredients.
- Toss pitted cherries in cornstarch and gently fold them along with sliced almonds into the batter.
- Pour into the loaf pan and sprinkle remaining cherries and almonds on top.
- Bake for about 50-60 minutes until a toothpick comes out clean.
- Cool before drizzling with an almond glaze made from confectioner’s sugar mixed with cream.
