  • 8 oz dry rotini pasta
  • 9 oz hard turkey slices, chopped
  • 6.5 oz turkey pepperoni, chopped
  • 1 cup canned artichoke hearts, drained & quartered
  • 2 cups cherry tomatoes, halved
  • 1 cup olives, pitted & halved
  • ½ cup pepperoncini, sliced
  • 8 oz mozzarella pearls
  • ¼ cup red onion, sliced thin
  • ⅓ cup fresh basil, sliced thin
  • ½ cup olive oil
  • ¼ cup red apple vinegar
  • 2 garlic cloves, minced
  • 1 Tbsp Italian seasoning
  • ¼ tsp red pepper flakes
  • Salt & black pepper, to taste

Instructions

  1. Cook the rotini pasta according to package directions until al dente. Drain and let cool.
  2. In a small bowl, whisk together olive oil, red apple vinegar, minced garlic, Italian seasoning, salt, and pepper; chill in the refrigerator.
  3. Prepare your salad ingredients: chop turkey slices and turkey pepperoni; halve cherry tomatoes; slice olives, red onion, and basil; set aside.
  4. In a large mixing bowl, combine cooled pasta with turkey slices, turkey pepperoni, artichokes, tomatoes, olives, pepperoncini, mozzarella pearls, red onion, and basil; drizzle with vinaigrette and toss gently.
  5. Chill for at least 30 minutes before serving.
