Ingredients
- 2 boneless, skinless chicken breasts
- 2 medium Yukon Gold potatoes
- ½ cup plain Greek yogurt
- ½ cup grated Parmesan cheese

- 1 tsp dried oregano
- 1 tsp lemon zest
- Salt & pepper to taste

- 1½ cups cooked jasmine or basmati rice
- 1 tbsp olive oil (for rice)
- 1 tbsp chopped fresh basil
- 1 tbsp butter
- Water or chicken broth to thin, if needed
Instructions
- Marinate the chicken in minced garlic, olive oil, oregano, lemon zest, salt, and pepper for at least 30 minutes. Grill over medium-high heat for 5-6 minutes per side until cooked through.
- Preheat the oven to 400°F (200°C). Toss diced potatoes with olive oil, minced garlic, grated Parmesan cheese, rosemary (or thyme), salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until crispy.
- In a saucepan over low heat, combine cooked rice with olive oil and chopped basil; season with salt and pepper.
- To make the Alfredo sauce, melt butter in a skillet over medium heat. Sauté minced garlic until fragrant. Add heavy cream and Parmesan cheese; stir until melted. Mix in Greek yogurt and adjust thickness as needed.
