- 2 medium Yukon Gold potatoes, cut into ½-inch cubes

- 8 oz cremini mushrooms, finely chopped
- 2 tbsp olive oil

- ¼ cup heavy cream
- 2 tbsp balsamic vinegar
- 2 tbsp fig jam (or finely chopped dried figs)
- Salt & freshly cracked black pepper to taste
Instructions
- Marinate chicken slices in olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper for at least 30 minutes.
- Grill the marinated chicken on medium-high heat for 2-3 minutes per side until cooked through.
- Preheat oven to 425°F (220°C) and toss potato cubes with olive oil, minced garlic, rosemary, salt, and pepper; roast for 20-25 minutes until crispy.
- Prepare the mushroom basil pesto by sautéing chopped mushrooms and garlic in olive oil before blending them with basil leaves and cream until smooth.
- To make the fig-balsamic glaze, simmer balsamic vinegar and fig jam in a small saucepan until thickened.
- Serve the grilled chicken over the crispy potatoes topped with creamy pesto sauce and a drizzle of fig-balsamic glaze.
