  • 4 potatoes
  • 100 ml lemon juice
  • 100 ml olive oil
  • 5 garlic cloves
  • 1 large onion
  • 1 tbsp fresh rosemary
  • 1.5 tbsp honey
  • 1.5 tbsp mustard
  • Salt
  • Pepper
  • Oregano
  • Paprika

Instructions

  1. Preheat your oven to 175°C (fan-forced).
  2. Line a roasting dish with parchment paper and place chicken skin side up.
  3. Cut potatoes into even pieces and arrange them around the chicken.
  4. Season both the chicken and potatoes with salt, pepper, oregano, and paprika.
  5. In a blender, combine lemon juice, olive oil, garlic, onion, rosemary, honey, and mustard; blend until smooth.
  6. Coat the chicken and potatoes with half of the marinade.
  7. Flip the chicken skin side down and season again; pour remaining marinade over it before flipping back over.
  8. Cover the dish with wet baking paper followed by aluminum foil.
  9. Bake for 90 minutes, then uncover and bake for an additional 30 minutes until golden brown.
  10. Let rest for about 10 minutes before serving.
