  • 2 medium sweet potatoes, cut into wedges

  • Salt & pepper to taste
  • 1 ripe avocado
  • Juice of 1/2 lime
  • 1 cup cherry tomatoes, halved
  • 1/2 avocado, diced
  • 1/4 small red onion, thinly sliced
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • Optional: chopped fresh cilantro

Instructions

  1. Preheat your oven to 200C (400F) for the sweet potato fries.
  2. Toss sweet potato wedges with olive oil, smoked paprika, and salt; spread on a baking sheet and roast for 20-25 minutes until crispy.
  3. Season the chicken breast with olive oil, paprika, garlic powder, salt, and pepper; marinate briefly.
  4. Grill the chicken over medium heat for 6-7 minutes per side until cooked through (internal temp of 75°C or 165°F).
  5. Mash the avocado with lime juice, salt, and pepper to make guacamole.
  6. Combine cherry tomatoes, diced avocado, sliced red onion, olive oil, salt, and pepper to create the salad.
  7. Assemble by layering sweet potato fries at the bottom of each bowl topped with grilled chicken slices, guacamole, and tomato-avocado salad.
