Ingredients
- 2 boneless, skinless chicken breasts
- ½ cup all-purpose flour
- 1 tsp garlic powder
- ½ tsp paprika
- Salt & freshly cracked black pepper to taste
- 2 tbsp olive oil
- 3 cloves garlic, minced
- ¼ cup hot honey (or regular honey with red pepper flakes to taste)
- 1 tbsp soy sauce
- 1 large head of broccoli, cut into florets
- 2 cloves garlic, minced
- ¼ cup grated Parmesan cheese
- 8 oz spaghetti, cooked according to package directions
- 2 tbsp butter
- 1 cup heavy cream
- ¼ cup fig jam (or finely chopped dried figs)
- 2 tbsp balsamic vinegar
- ½ cup shredded fontina cheese
Instructions
- In a shallow dish, mix together flour, garlic powder, paprika, salt, and pepper. Dredge the chicken pieces in the flour mixture until well-coated.
- Heat olive oil in a large skillet over medium-high heat. Sauté the chicken until golden brown and cooked through; remove from skillet and set aside.
- In the same skillet, sauté minced garlic until fragrant. Stir in hot honey and soy sauce; bring to a simmer and cook until slightly thickened. Return the chicken to the skillet and toss to coat thoroughly with the glaze.
- Preheat oven to 200°C (400°F). In a mixing bowl, toss broccoli florets with olive oil, minced garlic, salt, and pepper until well-coated. Spread broccoli on a baking sheet in an even layer. Roast for 15 minutes; sprinkle Parmesan cheese over broccoli. Roast for another 5-10 minutes or until tender-crisp and golden.
- While roasting broccoli, cook spaghetti according to package directions; drain and set aside. In the same pot (or a separate large skillet), melt butter over medium heat. Add minced garlic; sauté until fragrant but not burnt. Pour in heavy cream; bring to a gentle simmer. Stir in Parmesan cheese, fig jam (or chopped dried figs), and balsamic vinegar; cook until slightly thickened. Season with salt and pepper as needed; reduce heat to low. Stir in shredded fontina cheese until melted; add cooked spaghetti to sauce and toss well.
- Divide cheesy fig-balsamic Alfredo spaghetti between plates or bowls. Top each serving with crispy hot honey garlic chicken and roasted garlic-parmesan broccoli. Serve immediately while warm!
