- 1 lb boneless, skinless chicken breasts
- 2 tbsp olive oil
- 3 cloves garlic, minced

- ½ tsp smoked paprika
- Salt & freshly cracked black pepper, to taste
- ¼ cup hot honey
- 1 tbsp fresh lemon juice
- 2 medium Yukon Gold potatoes, cut into 1-inch cubes
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp dried rosemary
- 2 tbsp butter
- 2 large shallots, thinly sliced
- 8 oz cremini mushrooms, sliced
- 3 cloves garlic, minced
- ¼ cup fresh basil leaves
- Pinch of red pepper flakes
- 1 ½ cups heavy cream
- ¾ cup grated Parmesan cheese
- 1 large shallot, very thinly sliced into rings
- ¼ cup all-purpose flour
- Pinch of salt
- ½ cup vegetable oil
Instructions
- Preheat the oven to 400°F (200°C). Toss potato cubes with olive oil, minced garlic, rosemary, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden brown.
- In a bowl, combine chicken with olive oil, minced garlic, oregano, smoked paprika, salt, and pepper. Cook in a skillet over medium-high heat for 5-7 minutes until browned. Add hot honey and lemon juice to the skillet; simmer briefly before returning chicken to coat in the glaze.
- For the sauce, melt butter in another pan; add shallots and cook until caramelized. Stir in mushrooms and garlic until softened. Pour in heavy cream and stir in grated Parmesan until smooth.
- Combine glazed chicken with the creamy sauce and serve over roasted potatoes.
