  • 2 tbsp olive oil

  • ¼ cup hot honey
  • 1 tbsp fresh lemon juice
  • 2 medium Yukon Gold potatoes, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp dried rosemary
  • 2 tbsp butter
  • 2 large shallots, thinly sliced
  • 8 oz cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • ¼ cup fresh basil leaves
  • Pinch of red pepper flakes
  • 1 ½ cups heavy cream
  • ¾ cup grated Parmesan cheese
  • 1 large shallot, very thinly sliced into rings
  • ¼ cup all-purpose flour
  • Pinch of salt
  • ½ cup vegetable oil

Instructions

  1. Preheat the oven to 400°F (200°C). Toss potato cubes with olive oil, minced garlic, rosemary, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden brown.
  2. In a bowl, combine chicken with olive oil, minced garlic, oregano, smoked paprika, salt, and pepper. Cook in a skillet over medium-high heat for 5-7 minutes until browned. Add hot honey and lemon juice to the skillet; simmer briefly before returning chicken to coat in the glaze.
  3. For the sauce, melt butter in another pan; add shallots and cook until caramelized. Stir in mushrooms and garlic until softened. Pour in heavy cream and stir in grated Parmesan until smooth.
  4. Combine glazed chicken with the creamy sauce and serve over roasted potatoes.
