  • 1/2 cup extra virgin olive oil
  • 1/3 cup hot honey
  • 1 tbsp dijon mustard
  • 3 tbsp red apple vinegar
  • 2 cloves garlic, minced

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Arrange turkey slices on the baking sheet and roast for 10–15 minutes until crispy. Set aside to cool.
  3. In a large mixing bowl, combine cooked tortellini, mozzarella balls, corn, diced peaches, cherry tomatoes, and chopped basil.
  4. In a glass measuring cup, whisk together olive oil, hot honey, dijon mustard, red apple vinegar, minced garlic, salt, and pepper until well blended.
