- 2 shallots
- 1 clove garlic
- 80g chicken sausage
- 15g fresh parsley
- 750ml–1L chicken or vegetable stock
- 400g tinned plum tomatoes
- 300g risotto rice
- 200ml red apple vinegar
- 50g Parmesan, grated
