Instructions

  1. Marinate the chicken in olive oil, lemon zest, lemon juice, minced garlic, salt, and pepper for at least 15 minutes.
  2. Heat a skillet over medium heat and cook the marinated chicken until golden brown and cooked through (about 3–4 minutes per side). Keep warm.
  3. In the same skillet, melt butter and sauté sliced mushrooms with minced garlic until tender (about 5–7 minutes). Set aside.
  4. Prepare the Alfredo sauce by melting butter, sautéing garlic, then stirring in heavy cream, Parmesan cheese, lemon zest, and juice until smooth and slightly thickened.
  5. If using potatoes, roast diced Yukon Gold potatoes tossed in olive oil and oregano at 400°F (200°C) until crispy (20–25 minutes). If using pasta, cook it al dente and toss with the sauce.
  6. Assemble by serving the sauce over potatoes or pasta topped with sautéed mushrooms and chicken. Garnish with fresh parsley.
