  • Juice of one can of mandarin oranges (284ml)
  • Mandarin oranges (for folding into batter)
  • 2/3 cup brown sugar
  • 3 tbsp almond milk
  • 3 tbsp margarine

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8"x8" baking pan.
  2. In a bowl, mix the gluten-free flour and granulated sugar; set aside.
  3. Add eggs, baking soda, salt, and mandarin juice to the dry mixture and stir until smooth.
  4. Gently fold in mandarin orange segments.
  5. Pour the batter into the prepared pan and bake for 30-35 minutes until a toothpick comes out clean.
  6. For the sauce, combine brown sugar, margarine, and almond milk in a saucepan over medium-low heat until blended.
