Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a large bowl, toss chicken pieces with sliced zucchini, halved cherry tomatoes, thinly sliced red onion, minced garlic, olive oil, oregano, basil, salt, black pepper, and red pepper flakes.
  3. Spread the mixture evenly in the prepared baking dish and sprinkle with mozzarella and Parmesan cheese.
  4. Cover with aluminum foil and bake for 20 minutes.
  5. Remove foil and bake for an additional 10–15 minutes until cheese is golden brown and chicken reaches an internal temperature of 165°F (75°C).
