Ingredients
- 2 boneless chicken breasts
- 1 tbsp olive oil
- Juice of lemon
- 1 garlic clove, minced
- 1 tsp dried oregano
- Salt & pepper to taste
- 1 cup cooked basmati rice
- Cucumber, sliced
- 1 cup canned chickpeas, rinsed & drained
- Fresh dill for garnish
- 1 cup Greek yogurt
- Cucumber, grated & squeezed
- 1 garlic clove, minced
- 1 tbsp fresh dill, chopped
- 1 tsp lemon juice
- Salt & pepper to taste
- Optional: pinch of chili flakes
Instructions
- Marinate the chicken: In a bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add chicken breasts and coat well. Marinate for at least 15 minutes.
- Cook the chicken: Preheat grill or skillet over medium heat. Grill or pan-sear chicken for 6-7 minutes on each side until cooked through (165°F internal temperature). Let rest before slicing.
- Prepare the tzatziki: In another bowl, combine Greek yogurt, grated cucumber (squeeze out excess moisture), minced garlic, chopped dill, lemon juice, salt, and pepper. Mix well.
