Ingredients
- 160 g all-purpose flour
- 60 g powdered sugar
- 115 g unsalted butter, cold and cubed
- 1 egg yolk
- 1 medium apple, peeled and diced
- 80 g mixed berries (fresh or frozen)
- 2 tbsp granulated sugar
- 1 tsp lemon juice
- 1/2 tsp cinnamon
Instructions
- Prepare the shortbread dough by mixing flour and powdered sugar in a bowl. Add cold butter and rub until crumbly. Stir in egg yolk; add cold water if needed.
- Chill the dough in plastic wrap for about 30 minutes.
- Combine diced apple, mixed berries, sugar, lemon juice, cinnamon, and cornstarch in another bowl.
- Preheat oven to 180°C (350°F).
- Roll out chilled dough and cut into circles; place in muffin tin.
- Fill each crust with the fruit mixture.
- Bake for 25-30 minutes until golden brown.
