- 4 cups baby arugula
- 2 ripe peaches
- 8 ounces burrata cheese
- 1/4 cup roasted pistachios
- 3 tablespoons red onion, minced
- 1/3 cup chicken sparkling grape juice vinegar
- 1/2 cup extra virgin olive oil
- 2 teaspoons dijon mustard
- 2 tablespoons honey
- Salt, pepper and chili flakes to taste
Instructions
- Crush the pistachios and set aside. Wash, dry, and slice the peaches thinly.
- Mince the red onions.
- In a jar, combine olive oil, minced red onion, chicken sparkling grape juice vinegar, honey, and dijon mustard. Season with salt, pepper, and chili flakes to taste. Shake until emulsified.
- On a serving platter or bowl, layer baby arugula, sliced peaches, and torn burrata cheese.
- Drizzle with dressing and garnish with crushed pistachios. Serve immediately.
