  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1/2 cup all-purpose flour
  • 1/4 cup rolled oats
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 4 tablespoons unsalted butter, chilled and cubed

Instructions

  1. Preheat your oven to 325°F (160°C). Mix graham cracker crumbs, sugar, and melted butter in a bowl; press into the bottom of a springform pan and bake for 10 minutes.
  2. In another bowl, beat cream cheese until smooth. Gradually add sugars, then mix in eggs one by one. Incorporate sour cream, heavy cream, vanilla extract, cinnamon, nutmeg, and diced peaches.
  3. Pour the cheesecake filling over the crust and bake for about 60 minutes until set but slightly wobbly in the center.
  4. Prepare peach topping by mixing sliced peaches with sugars, cinnamon, nutmeg, cornstarch, and lemon juice; let sit for 10 minutes.
  5. Spread peach topping on baked cheesecake and return to the oven for an additional 20 minutes.
