Ingredients

Scale
  • 2 cups light or dark brown sugar
  • 1 cup salted butter (at room temperature)
  • 1 tablespoon vanilla extract
  • 2 large eggs
  • 1½ cups all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 2 cups pecan halves

Instructions

  1. In a large bowl or stand mixer, beat brown sugar, butter, and vanilla until light and fluffy (about 3 minutes). Add eggs and mix on low until just combined.
  2. In another bowl, whisk together flour, salt, and baking soda. Gradually add to the wet mixture on low speed until incorporated. Gently fold in pecans using a spatula.
  3. Cover dough with plastic wrap and refrigerate for about 30 minutes. Meanwhile, preheat the oven to 350°F (175°C) and line two cookie sheets with parchment paper.
  4. Form approximately 1.25" dough balls and place them on the prepared sheets at least 3 inches apart. Bake for about 8 minutes until edges are golden brown.
