  • 1/2 cup salted or unsalted butter (1 stick), room temperature
  • 1/3 cup pumpkin puree
  • 3 tbsp maple syrup (or honey)
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 tsp pumpkin pie spice

Instructions

  1. Preheat a non-stick skillet over medium heat and melt a small amount of butter.
  2. In a baking dish, whisk together eggs, milk, pumpkin puree, vanilla extract, cinnamon, and pumpkin pie spice until smooth.
  3. Dip each slice of bread in the mixture, fully coating both sides. Cook on the skillet for 2-3 minutes per side until golden brown.
