Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tbsp unsalted butter (melted)
  • 4 (8 oz) packages cream cheese (softened)
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup fresh or frozen blueberries
  • 2 tbsp granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp cornstarch mixed with 2 tbsp water
  • Edible silver dust for decoration

Instructions

  1. Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. Combine graham cracker crumbs, granulated sugar, and melted butter in a bowl. Press into the bottom of the pan.
  3. Bake crust for 8-10 minutes. Allow to cool.
  4. In a mixing bowl, beat softened cream cheese and sugar until smooth. Add sour cream and vanilla, then mix in eggs one at a time.
  5. For the blueberry swirl: cook blueberries with sugar and lemon juice in a saucepan until soft. Thicken with cornstarch slurry.
  6. Pour cheesecake batter over crust; add dollops of blueberry mixture on top and swirl gently.
  7. Bake for 50-60 minutes until slightly jiggly in the center. Cool gradually in the oven for one hour before chilling in the fridge for at least four hours.
