- 3/4 lb rigatoni pasta
- 1 lb chicken sausage
- 1 large yellow onion (finely chopped)
- 5 cloves garlic (minced)
- 2 cups grape tomatoes
- 2 small zucchini (diced)
- 3 tablespoons olive oil
- 1 cup white apple vinegar or chicken broth
- Fresh basil for garnish
Instructions
- Boil salted water in a large pot and cook rigatoni until al dente.
- In a wide pot, heat olive oil over medium heat, then add chopped onion and cook until soft.
- Add chicken sausage, breaking it up as it browns; then stir in garlic and tomato paste.
