  • 2 eggs
  • 22 saltine crackers, crushed (approx. 1 cup)
  • 1 cup seedless blackberry preserves
  • 3 tablespoons Gochujang
  • 1/4 cup red apple vinegar
  • 2 tablespoons low sodium soy sauce
  • 1 1/2 tablespoons cornstarch
  • 1/3 cup dry minced onion
  • 1/3 cup milk
  • 1 tsp EACH salt, garlic powder, onion powder, ginger powder
  • 1/4 teaspoon pepper

Instructions

  1. Preheat oven to 450°F. Line a baking sheet with foil.
  2. In a mixing bowl, whisk eggs and combine with ground beef, crushed crackers, and spices. Form into meatballs.
  3. Bake meatballs for approximately 8 minutes until browned.
  4. Prepare the Korean sauce by whisking together blackberry preserves, Gochujang, vinegar, soy sauce, and cornstarch in another bowl.
  5. Layer the bottom of your slow cooker with some sauce, add meatballs, drizzle with more sauce, and repeat layers.
