  • 2 tsp Pomona's Universal Pectin
  • 2 tsp calcium water (provided in the pectin box)
  • 1 tsp vanilla (optional)

Instructions

  1. Sterilize your jam jars and lids by boiling them in a water bath canner.
  2. In a large saucepan, combine pitted cherries, lemon juice, and calcium water; mix well.
  3. In a separate bowl, whisk together allulose and pectin until evenly combined.
  4. Heat the cherry mixture over medium heat until softened, mashing to your desired consistency.
  5. Stir in the pectin-allulose mixture and bring to a boil for one minute.
  6. Fill sterilized jars with the hot jam, leaving ¼ inch headspace. Seal with lids and bands.
  7. Process jars in boiling water for 10 minutes to ensure proper sealing.
  8. Allow to cool undisturbed for 24 hours before storing.
