Ingredients
- 1 ear of corn
- 1 long English cucumber
- 2 cups cherry tomatoes
- 1/2 avocado
- 2 cups fresh strawberries

- Juice of 1/2 lemon
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Steam the corn by boiling water in a large pot. Add the ear of corn (or use a steamer basket) and cover for about 5 minutes until tender.
- While the corn steams, chop the cucumber, cherry tomatoes, strawberries, and avocado. Crumble feta cheese if using and chop fresh basil.
- Once the corn is done cooling slightly, slice off the kernels into a bowl.
- In a large salad bowl, combine corn kernels, strawberries, tomatoes, cucumber, avocado, feta cheese (if included), and basil.
