Instructions

  1. In a large saucepan, combine apple cider vinegar, sugar, lemon juice, mustard seeds, turmeric powder, grated ginger, and chopped garlic. Bring to a boil over medium-high heat and simmer until the sugar dissolves completely.
  2. Add the diced pineapple and sliced jalapeños to the pot. Simmer for about 20 minutes until the pineapple softens and the mixture thickens into a syrupy consistency.
  3. Sterilize canning jars and lids in boiling water for at least 5 minutes.
  4. Fill hot jars with the relish mixture, leaving about a quarter inch of headspace. Clean jar rims and secure lids tightly.
  5. Process filled jars in a hot water bath for 10 minutes to seal properly.
  6. Allow jars to cool completely on a clean towel or rack before storing in a cool, dark place.
