  • 1/2 shallot, finely chopped

  • 1/4 cup chopped fresh basil
  • 2 tablespoons chopped fresh oregano
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh thyme
  • Red pepper flakes (to taste)

  • 1 1/22 cups cherry tomatoes, halved if large
  • 23 peaches, sliced into wedges
  • 1 cup pitted fresh cherries
  • 8 ounces burrata cheese, at room temperature
  • 1/4 cup toasted pumpkin seeds

Instructions

  1. In a glass jar, mix the vinaigrette ingredients (olive oil, vinegar, honey, shallot, garlic, lemon zest, herbs). Whisk until smooth.
  2. In a large bowl, combine cherry tomatoes, peach wedges, and pitted cherries. Drizzle with one-third of the vinaigrette and let sit at room temperature for 15 minutes.
  3. Break burrata into pieces over the salad mixture. Drizzle with remaining vinaigrette and top with toasted pumpkin seeds.
