  • 2 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp dried thyme
  • Salt & freshly cracked black pepper to taste
  • 1 medium Yukon Gold potato, cut into 1-inch cubes
  • 1 small head of broccoli, cut into florets
  • 1 tbsp olive oil
  • ½ cup shredded mozzarella cheese
  • 1 clove garlic, minced
  • Salt & freshly cracked black pepper to taste
  • 2 tbsp butter
  • 8 oz cremini mushrooms, sliced
  • 1 roasted red bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 ½ cups heavy cream
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh basil leaves, chopped
  • Salt & freshly cracked black pepper to taste

Instructions

  1. Marinate chicken slices in olive oil, minced garlic, oregano, basil, thyme, salt, and pepper for at least 30 minutes. Grill or sauté for about 3 minutes per side until cooked through.
  2. Preheat oven to 400°F (200°C). Toss potato cubes and broccoli florets with olive oil, garlic, salt, and pepper. Roast on a baking sheet for 15 minutes; top with mozzarella cheese and roast for another 5-10 minutes.
  3. In a skillet over medium heat, melt butter and sauté mushrooms and garlic until softened. Add roasted red pepper and heavy cream; simmer gently. Stir in Parmesan cheese until thickened. Season with salt and pepper.
  4. Serve grilled chicken over the cheesy roasted vegetables and drizzle generously with the creamy sauce.
