Ingredients
- 2 boneless, skinless chicken breasts, cut into bites
- 1 tbsp olive oil
- 2 cloves garlic, minced

- ½ tsp smoked paprika
- Salt & pepper to taste
- 2 medium Yukon Gold potatoes, diced
- 1 tbsp olive oil

- Extra Parmesan

Instructions
- Preheat your oven to 400°F (200°C). Toss diced potatoes with olive oil, minced garlic, chopped rosemary, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until golden.
- Season chicken bites with olive oil, minced garlic, oregano, smoked paprika, salt, and pepper. Grill or pan-sear over medium-high heat for about 4–5 minutes per side until cooked through.
- Blend roasted tomatoes, basil pesto, Greek yogurt (or cream), Parmesan cheese, and olive oil in a blender until smooth. Adjust seasoning as needed.
- Plate the roasted potatoes and top them with the grilled chicken bites. Drizzle generously with the creamy pesto sauce before serving.
