  • 2 large eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1 vanilla bean, split and seeds scraped
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for topping)

Instructions

  1. Preheat your oven to 325°F (160°C) and line a muffin tin with cupcake liners.
  2. In a small bowl, mix graham cracker crumbs, sugar, and melted butter. Press into cupcake liners to form the crust.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then stir in sour cream, heavy cream, vanilla bean seeds, and vanilla extract.
  4. Fill lined cups with cheesecake batter and bake for 20–25 minutes until slightly jiggly in the center.
  5. Cool at room temperature before chilling in the fridge for at least 2 hours.
