- 1 & 1/2 teaspoons pumpkin spice (for filling)
- 50g maple syrup
- 2 teaspoons cornstarch/cornflour
- Dairy-free milk (for icing)
- 100g icing sugar
- 1 teaspoon maple syrup (for icing)
- 1/2 teaspoon pumpkin puree (for icing)
- 1/4 teaspoon pumpkin spice (for icing)
Instructions
- In a mixing bowl, combine flour, sugar, and pumpkin spice. Add cold dairy-free butter and mix until crumbly.
- Gradually add ice water until dough forms; chill for at least 30 minutes.
- Prepare the filling by mixing pumpkin puree, pumpkin spice, maple syrup, and cornstarch until smooth.
- Preheat oven to 180°C (350°F). Roll out chilled dough to 1/8 inch thickness and cut into rectangles.
- Place filling on half of each rectangle; fold over and seal edges.
- Bake for 25-30 minutes until golden brown.
- For icing, whisk together icing sugar, maple syrup, pumpkin puree, and dairy-free milk until desired consistency is reached; drizzle over cooled pop tarts.
